August Dessert of The Month: Sweet Potato Pie

Wawarsing Sweet Potato Pie

3 cups of Cooked warm mashed sweet potatoes.
3 Eggs
6 tablespoons of sugar (2 more if want sweeter.)

pinch of salt, nutmeg, cinnamon.

1/2 cup of Cream.
1 unbaked pie crust

instructions
1. Boil sweet potatoes in jackets until tender (20-30minutes)
2. Peel them while still hot and mash (pre-heat oven 350)
3. Beat eggs
4. Mix sugar and spices into mashed sweet potatoes (stir good)
5. Pour cream in sweet potato batch and blend.
6. Pour the sweet potato filling into the unbaked pie shell.
7. Bake in the preheated oven for hour.
